LOW CARB WAFFLES

This morning my hubby was making his family famous gluten free oat waffles for our kids. They had some friends sleep over last night and we wanted to make them a fun breakfast. What kid doesn’t like waffles with whip cream and fruit?!

But lately I’ve been exploring more low carb options. As I get older my IBS (irritable bowel syndrome) seems to be worse each year. I had a colonoscopy a couple years ago and all they could say was that I should be on medication. Well, I’m stubborn AF and said NO! I will keep trying to control it with diet. But The last couple years, I’ve found myself so uncomfortably bloated. Things I used to eat without issue, just aren’t working for me anymore. It actually feels like someone is blowing up a balloon inside my stomach and its quite painful sometimes. Keto just isn’t something I see as a lifestyle fit for myself. But I have found that following a lower carb lifestyle over the past couple months has truly been saving me some serious discomfort.

So for the last couple months I’ve been altering my meals to be more of a low carb nature and it has truly eased my pain and allowed me the freedom to continue eating things I love without suffering, OR having to bow down to medication!

So, to make a long story longer, (Cue eye roll here ! LOL!) I made my own waffle recipe of a low carb nature this morning!

We have a round waffle maker (about 8” diameter) , so this recipe made 1.5 waffles.

GREASYGIRLS LOW CARB WAFFLES

-2 eggs

-1/2 cup unsweetened almond milk

-1/2 cup almond flour

-1/2 tsp baking powder

-1/4 tsp xanthan gum

-1/2 tsp vanilla

-1 tsp melted coconut oil

-1/2 tsp cinnamon

-1 packet monk fruit sweetner ( I use Krisida brand)

Method : Place all wet ingredients into a bullet cup, then place dry ingredients on top of wet. Blend for 20-30 seconds until all is well blended. Pour into waffle maker. Make sure you don’t overfill or it ill spill out everywhere! We let ours cook for 4 min. Makes a crispy golden waffle on the outside, and a light and fluffy one on the inside.
Serving suggestion: Top with coconut whip cream and strawberries

If you are counting carbs the entire recipe works out to 4.5 net carbs for 1.5 waffles. (1 batch)
